This simple recipe uses accessible ingredients and playful decorating tips to bring tiny two-wheelers to life! They are perfect snacks for a cycling trip, or post-cycling or as a fun afternoon craft-and-bake activity.
🛒 Ingredients (makes ~12 cookies)
For the sugar cookies:
◽️ 225 g unsalted butter, softened (1 cup)
◽️200 g granulated sugar (1 cup)
◽️1 large egg
◽️1 tsp vanilla extract
◽️2 tsp baking powder
◽️375 g all-purpose flour (about 3 cups)
🥣 For decorating:
◽️ Royal icing or store-bought icing tubes (black, red, blue, white)
◽️ Round chocolate biscuits/candies (for wheels)
◽️ Pretzel sticks or thin chocolate sticks (for frame/handlebars)
◽️ Sprinkles or edible markers for extra flair
🍪 Instructions
1. Prepare the Cookie Dough
-
In a mixing bowl, cream together butter and sugar until light and fluffy.
-
Add the egg and vanilla extract; mix well.
-
Gradually stir in the flour and baking powder to form a soft dough. If sticky, chill in the fridge for 30 minutes.
2. Shape and Bake
-
Roll the dough out to about 0.5 cm thickness on a lightly floured surface.
-
Use a round cookie cutter (or a glass rim) to make the “wheel” shapes.
-
Transfer to a lined baking sheet and bake at 180 °C (350 °F) for 8–10 minutes, or until lightly golden.
-
Let them cool completely before decorating.
3. Decorate Your Bicycle Cookies
-
Place two round cookies or candies next to each other to serve as wheels.
-
Use pretzel or chocolate sticks to create the bike frame and handlebars between the wheels — secure them with a bit of royal icing.
-
Pipe additional detail with icing: seat, chain, spokes, or even a tiny saddle!
-
Let your little bakers add personal touches with sprinkles or edible markers.
4. Serve & Enjoy
Once the icing has set, these charming bicycle treats are ready for snacking.
